Mexican Scrambled Eggs

Ingredients

  • 3 eggs
  • 1 French Onion
  • 7 – 8 pickled jalapeños, finely chopped
  • ½ tomato, finely chopped
  • 50 g shredded cheese
  • 1 tablespoon butter, for frying
  • salt and pepper

Method – Step by step

  1. Finely chop the spring onions, jalapeños and tomatoes. Fry in butter for 3 minutes on medium heat.
  2. Beat the eggs and pour into the pan and scramble for 2 minutes before adding cheese and seasoning.
  3. Serving suggestion: Avocados, lettuce and dressing.
