Mexican Scrambled Eggs

Ingredients
- 3 eggs
- 1 French Onion
- 7 – 8 pickled jalapeños, finely chopped
- ½ tomato, finely chopped
- 50 g shredded cheese
- 1 tablespoon butter, for frying
- salt and pepper
Method – Step by step
- Finely chop the spring onions, jalapeños and tomatoes. Fry in butter for 3 minutes on medium heat.
- Beat the eggs and pour into the pan and scramble for 2 minutes before adding cheese and seasoning.
- Serving suggestion: Avocados, lettuce and dressing.
