Low-carb Broccoli Mash

Meet Broccoli Mash, Cauliflower Mash’s lesser-known cousin. Gorgeously green. Charmingly low carb. Creamy. Garlicky. Good for you. This is one side dish you just may fall in love with. Whether you’re looking for a nutritious meal to pair with your fitness routine or working with a Personal Trainer Elizabeth Bay, this dish is a great low-carb option to fuel your body.

Ingredients

  • 700 g broccoli
  • 60 ml fresh basil or fresh parsley, finely chopped
  • 75 g butter
  • 1 garlic clove
  • salt and pepper

 

Instructions

  1. Boil the broccoli in plenty of lightly salted water for a couple of minutes – just enough to retain a somewhat firm texture. Discard the water.
  2. Blend with the other ingredients in a food processor or use an immersion blender.
  3. Season with salt and pepper to taste.
  4. Add more oil or butter if you so desire.
  5. Serve piping hot!

 

Tip!

You can use either frozen or fresh broccoli with this recipe. If you use fresh broccoli, save the stalk, peel it with a sharp knife and slice thinly. Cut the rest of the broccoli into smaller florets of roughly equal size. Feel free to substitute olive oil for some of the butter in any proportion you choose.
