Keto Buffalo drumsticks with chili aioli

Chicken drumsticks are delicious as a keto snack or main course. Goes great with a spicy garlic and chili aioli.

Ingredients

Chicken drumsticks and marinade

  • 2 lbs chicken drumsticks
  • 2 tbsp olive oil or coconut oil
  • 2 tbsp white wine vinegar
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp paprika powder
  • 1 tbsp tabasco

Chili aioli

  • 13 cupmayonnaise
  • 2 tsp chipotle powder
  • 1 garlic clove, minced

 

Instructions

Chicken drumsticks and marinade

    1. Preheat the oven to 365°F (185°C). Grease a baking dish with oil.
    2. Put the drumsticks in a plastic bag or a medium-sized bowl.
    3. Mix the marinade ingredients together in a small bowl, and then pour it over the drumsticks, to completely coat. Marinade for 10 minutes at room temperature.
    4. Place the drumsticks in the baking dish and bake for 30-40 minutes, until golden and crispy.

Chili aioli

  1. In a small bowl, mix together the mayonnaise, minced garlic, and chili powder until well combined.
  2. Serve the drumsticks with the chili aioli on the side.
