Chicken liver in mushroom sauce & broccoli mash

Liver is an often-overlooked part of the chicken, and many have not yet discovered the beauties of this budget-friendly delicious culinary delicatesse. This chicken liver recipe with creamy mushroom sauce and broccoli mash will surprise both sceptics and liver lovers alike.
Ingredients
- 150 g smoked pork belly or bacon
- 175 g mushrooms
- 75 g shallots
- 2 tbsp butter
- 450 g chicken livers
- 300 ml heavy whipping cream
- 125 ml fresh parsley
- salt and pepper
Broccoli mash
- 650 g broccoli
- 75 g butter
- 75 g cream cheese
- salt and pepper
Instructions
- Dice the pork belly or bacon and fry until crispy in a hot frying pan. Remove and keep warm. Save the leftover fat.
- Finely chop the onion. Cut mushrooms in quarters and fry with onion in the fat until soft. Remove and keep warm.
- In the same pan, add butter and fry the liver for a few minutes on each side. Stir in cream, combine and simmer until warmed through. Stir in parsley before serving.
- Roughly chop the broccoli florets. Cook until soft in lightly salted water. Drain and mix with butter and cream cheese. Season with salt and pepper.
- Serve liver with the onion and mushroom sauce, and broccoli mash.
